Submitted by DOSAtruck on Tue, 11/09/2010 - 19:02The DOSA is likened to a sourdough crepe from South India. Of course it is not really a crepe, it is a DOSA.
Although it appears to be a simple street food ,the preparation and execution of the DOSA takes love, patience and practice.
It is because the DOSA has to be custom cooked from a batter. You can not buy a package of DOSAS and slap one on the grill.
First a grain called Urad dahl is soaked. Then this grain is ground and blended with rice flour. Then this batter has to ferment to exactly the right amount of fermentation.

Lakshimi is the Goddess of Abundance and Prosperity and she is the Diety who is honored for DIWALI.
Many lights called Aarti are waved on puja trays in her honor and in honor of this Holiday. The little trays in our logo are Aarti trays.
So it is a good time for reflection, for making changes.
I have contemplated this and it is my heartfelt wish for everyone that they find their own place and space on this planet in their own unique way.
